Eggless Chocolate Cake with Peanut Butter Frosting and Chocolate Glaze




I kept surfing the net looking for a different type of frosting for my cake barring the typical butter cream frosting and when i came across a 'Peanut Butter' frosting for a 'Chocolate Cake' topped with a glossy 'Chocolate Glaze' on smitten kitchen, it made me wonder if CHOCOLATE would pair perfectly with PEANUT BUTTER?

Hmm... Chocolate holds the first place on my sweet tooth menu and well, i like peanuts :) not LOVE-LOVE but i do like peanuts so i decided to take the idea and put it to the test! Guess what? The slightly salty peanut butter frosting and the rich, sweet egg less chocolate cake with that delectable choc sauce was like HEAVEN in my mouth! Especially the crunchy peanut butter made it all the more yummy!

For this cake you will need:

In order to assemble this cake, follow the instructions given below.

  • If your baked chocolate cake has a slight dome, then level it using a cake leveler or a bread/serrated knife. Mine did. Make sure the cake is completely cooled before you level it to avoid too much of crumbs falling.
  • Now sandwich the cake in half again using a bread/serrated knife as shown below.
  • Separate the cake layers and place one layer onto the turning table (or any platform where you are going to frost the cake).
  • In the video below i show you how i sandwiched the cake with the Peanut Butter Frosting.

Ingredients for Chocolate Glaze.

  • 115g Dark chocolate
  • 120g heavy whipping cream
  • 85g golden syrup
  • 10g vanilla essence
Method
  • Heat the heavy cream until just boiling
  • Pour over the chopped chocolate and stir until melted

  • Add the syrup and vanilla and mix

  • Strain the chocolate sauce into a separate jar.
  • Wrap with plastic wrap and cool for 20mins.


Drizzle some of this silky glaze of chocolate over the cake and serve! :)
